
One of the easiest and quickest ways to get a nice portion of veggies and protein in for lunch or dinner is the classic stir fry - sneakily delicious and easily overlooked.
So here's a recipe for a really nice (not to mention super speedy) Chicken Cashew Stir Fry for days when you need something and you need it NOW! Making it for dinner? Chuck in double and make a double batch so you have lunch for tomorrow too.
I've chosen the speediest versions of each ingredients to deliver fast but nutritious food.
So let's get to it. Here's what you'll need:
Serves 2
For the base:
- 1 pack pre-diced chicken breasts
- 1 large pack pre-chopped stir fry veggies of choice
- Cupped handful of cashews
- 1 tsp coconut oil to fry in
For flavour:
- tbsp lazy ginger
- 1 tsp lazy garlic
- 1/2 tsp chilli paste or a red chilli finely chopped
- Glug of tamari (traditionally fermented soya sauce) or soya sauce
To top:
- Sprinkle of esame seeds
- Sprinkle of chopped coriander
- Squeeze of lime
- Sliced Spring Onion
What to do:
Add coconut oil to the frying pan. Sizzle up some chicken until browned on each side. Add veggies. Add flavourings. Then add cashews. Stir fry until veggies are tender and chicken is cooked through. Serve up, add toppings and away you go!
